(1) The customer stores the fresh milk as a whole in the raw milk tank, and then pumps the raw milk into the preheating tank through a dedicated stainless steel milk pump and a dual filter for preheating. The preheating temperature is generally around 45 ºC.
(2) After preheating, pour the raw milk into the homogenization tank for homogenization, and add corresponding auxiliary materials to make the raw milk smoother after homogenization.
(3) After homogenization is completed, turn on the centrifugal milk pump and pour the raw milk into the pasteurization tank for sterilization and stirring.
(4) When sterilization is required, turn on the centrifugal milk pump connecting the original milk tank and the pasteurization tank, and use 350 # thermal oil or hot water/steam for pasteurization. Depending on the different heat sources and production rates, the sterilization time is generally about 0.5-1.5 hours, and the pasteurization temperature is 85 ºC.
(5) After sterilization is completed, fresh milk is pumped into a pre cooling tank using a milk pump. The pre cooling tank uses cold water for pre cooling, and then it is poured into a fermentation tank to add the corresponding bacterial strains and fermentation agents for yogurt fermentation.
(6) After the overall operation is completed, the equipment needs to be cleaned by CIP, which stands for Clean In Place, meaning in-situ cleaning/online cleaning.
CIP cleaning is a safe and automatic cleaning system that does not decompose production equipment and can be easily operated. It has been introduced into almost all food, beverage, and pharmaceutical factories. CIP cleaning can not only clean machines, but also control microorganisms.
The CIP cleaning system consists of three storage tanks, each containing weak acid water, weak alkali water, and clean water, as well as water pumps, pipelines, valves, and other components. By circulating and cleaning the equipment with three different liquids, the equipment is kept clean without any hygiene blind spots. In principle, it is recommended that customers use CIP cleaning systems, but the cost of CIP cleaning systems is relatively high. If the output is low, customers can also choose manual cleaning.
